A STUDENT AND TEACHER PERSPECTIVE
The third month of lockdown restrictions is well under way and we have all had to make changes and adapt to this new way of life. At Westminster Kingsway College, our hospitality students and teachers have had to find clever and creative ways to stay on top their game with this very hands-on subject whilst the college buildings are closed. In this blog Hospitality lecturer Marc Whitley and Culinary student Phoebe Berry share their unique experiences of teaching and learning during the lockdown.
FREE ONLINE COURSES
The Front of House Lecturers at Westminster Kingsway’s College Culinary Arts Programme Victoria have put together 6 free on line courses in Champagne, Rose, White, Red, Dessert and The Value of Wine. Sign up for all 6 wine courses or just what interests you, plus look for other online free courses being released soon in Food, Sustainability and Health.
Whether you’re in the industry and want to improve your knowledge or have an interest in wine. Pass all 6 modules and you will receive a certificate at the end which you can print up.
Not only do we aged our own Hereford and Aberdeen Angus steaks at WKC, but we then grill them on our Josper Grill. We have installed a large Josper Grill in the Brasserie as well as a smaller version in The Escoffier Kitchen. The Josper Grill can reach temperatures of over 350 degrees using charcoal. This gives a clean barbeque flavour and subtle smokiness that works well with all foods. Essentially, the Josper Grill is a hybrid oven that gives the flavour of the grill with the controlled cooking temperature of the oven.
Currently, we have a 32 day old dry aged Cote de boeuf for two carved at the table. This is served with Grilled Mushrooms, Tomatoes, Chips, Spinach and a choice of sauce for only £20 per person. There is for a minimum of two people. We have teamed this up with a bottle of Spanish Viña Albina Rioja Crianza Red Wine and it’s a match made in heaven!! At other times we also offer Aged 500g Rumps and Sirloins for 2 - check with us to see what steak is available when you visit.
Earlier this year in February we opened our restaurant and our brand new bar complete with cocktails devised by our students, a big gin list, draft ales and more. This is a great place to meet before you dine or just meeting friends and colleagues for that well deserved drink.
