
A Pastry Chef will plan, prepare, cook and finish complex, refined patisserie using a range of refined tools, techniques and specialist equipment in establishments such as fine dining restaurants and hotels in the pastry section or artisan patisserie establishments.
The Pastry Chef apprenticeship is suitable for someone who plans, prepares and produces complex, refined patisserie. In their daily work they will interact with internal customers and stakeholders. They will work towards meeting quality standards, deadlines, productivity, hygiene, financial and environmental requirements. They may take a supervisory role for other staff.
Our teachers are currently planning for the safest ways to deliver this course from September. We have been delivering all of our courses online since the outbreak of Coronavirus in March 2020, and we are fully equipped to continue this for as long as is necessary. We hope to be able to deliver the course in a mixed format - blending online lessons with face-to-face teaching – as and when we feel that, on the basis of Government advice and our own risk assessments, it is safe to do so. The ratio of face-to-face teaching in our college buildings to online teaching will vary from course to course, so more specific information will be provided to you at enrolment.
